  1. Toss the grated zucchini with half the salt and leave for 10 minutes. Wrap in a clean cloth and squeeze firmly to remove as much moisture as possible.
  2. Mix the zucchini, ricotta, egg, ground almonds, Parmesan, half the parsley, remaining salt and pepper. Rest for 5 minutes to let the almond meal absorb moisture.
