STEP BY STEP

Let’s make it.

  1. Heat the oil in a wide lidded skillet. Cook the onion and pepper for 6–8 minutes, until softened.
  2. Add the garlic, cumin and paprika and stir for 30 seconds. Add the tomatoes, salt and pepper and simmer uncovered for 8 minutes, until thick.
  3. Fold in the spinach until wilted. Make shallow hollows in the sauce and add the weighed eggs, keeping them in separate pools where possible.
  4. Scatter the feta around the eggs. Cover and cook gently for 6–10 minutes, until whites and yolks are firm and the egg reaches 160°F (71°C).
  5. Divide the eggs, sauce and feta equally into 4 servings. For fractional eggs when scaling, beat and weigh the egg, then pour it into the hollows.
