STEP BY STEP

Let’s make it.

  1. Heat the oven to 350°F (175°C). Line 10 muffin cups. Mix the ground almonds, ground desiccated coconut, baking powder and salt.
  2. Whisk the eggs, yogurt, butter, sugar and vanilla. Stir into the dry mixture and leave for 5 minutes to hydrate.
  3. Spoon evenly into the lined cups, leaving a little room for the batter to rise.
