STEP BY STEP
Let’s make it.
- Heat the oven to 340°F (170°C) and line a 20 cm square tin. Mix the almond meal, cocoa, baking powder and salt, breaking up any cocoa lumps.
- Whisk the eggs, sugar, yogurt, butter and vanilla until smooth. Stir into the dry mixture, then fold in the walnuts.
- Spread evenly in the tin and smooth the top with a spatula.
- Bake for 23–28 minutes, until the center is set and a skewer comes out with moist crumbs but no liquid batter. The egg mixture should reach at least 160°F (71°C).
- Cool completely in the tin before lifting out and cutting into 12 servings.
Kitchen notes
- These cocoa-forward brownies are less sweet than conventional brownies. Cooling fully gives neater slices.
- The total time includes approximately 45–55 minutes for cooling before slicing. A larger or deeper bake may need longer.
