STEP BY STEP

Let’s make it.

  1. Heat the oven to 340°F (170°C). Line the base and sides of a 20 cm round cake tin. Mix the almond meal, baking powder and salt.
  2. Whisk the ricotta, sugar and eggs until smooth. Whisk in the cooled melted butter, lemon juice and vanilla.
  3. Fold in the dry ingredients just until combined. Scrape into the tin and level the top.
  4. Bake for 40–50 minutes until lightly golden and set, with no wet batter on a skewer. Cover loosely with foil if the top colors early.
