STEP BY STEP

Let’s make it.

  1. Heat the oven to 350°F (175°C). Line a roughly 20 × 10 cm loaf tin. Mix the almond meal, cinnamon, baking powder and salt.
  2. Whisk the eggs, yogurt, oil, sugar and vanilla in a second bowl. Fold into the dry ingredients.
  3. Fold in the finely grated carrot and walnuts, distributing them evenly. Scrape into the tin and level the surface.
  4. Bake for 45–55 minutes until the center is set and a skewer comes out without wet batter. Shield the top with foil if it darkens before the middle cooks.
  5. Cool in the tin for 10 minutes, then cool fully on a rack before slicing into 10 servings.

Kitchen notes

  • The carrot and sugar both contribute carbohydrates. No frosting is included in this recipe or its nutrition.
  • The total time includes approximately 45–55 minutes for cooling before slicing. A larger or deeper bake may need longer.
