STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Line a roughly 20 cm square tin. Squeeze the grated zucchini firmly in a clean cloth.
- Whisk the eggs, yogurt and oil. Stir in the almond meal, baking powder, salt and pepper.
- Fold in the zucchini, feta and parsley, then spread the thick mixture evenly in the lined tin.
- Bake for 30–38 minutes until golden, firm in the center and at least 160°F (71°C). A skewer should come out without wet batter.
- Rest for 10 minutes, lift out and cut into 8 servings.
Kitchen notes
- Weigh the zucchini before squeezing. Choose vegetarian-rennet feta if required.
