STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Line a roughly 20 × 10 cm loaf tin. Wrap the grated zucchini in a clean cloth and squeeze very firmly.
- Mix the ground almonds, baking powder, salt and pepper. Separately whisk the eggs, yogurt and oil.
- Stir wet and dry ingredients together, then fold in the zucchini and cheddar. Spread evenly in the loaf tin.
- Bake for 45–55 minutes, until the middle feels set and a skewer comes out without wet batter. Cover the top loosely if it browns too fast.
- Leave in the tin for 10 minutes, then cool fully on a rack before cutting into 10 servings.

- The zucchini weight is before squeezing; its full raw nutrient contribution is included. A warm loaf will crumble if sliced too soon.
- The total time includes approximately 45–55 minutes for cooling before slicing. A larger or deeper bake may need longer.
