STEP BY STEP

Let’s make it.

  1. Heat the oven to 350°F (175°C) and line a baking tray. Combine the almond meal, baking powder, salt and half the sesame seeds.
  2. Stir in the grated mozzarella, eggs and yogurt to make a thick, sticky dough. Rest for 10 minutes to allow the meal to hydrate.
  3. Divide into 6 equal mounds on the tray. With damp hands, shape each into a squat bun about 7 cm wide; they will spread slightly.
  4. Scatter with the remaining sesame seeds and press them lightly into the dough. Bake for 22–28 minutes until golden, firm and free of wet dough at the center.
  5. Cool on the tray for 5 minutes, then move to a rack. Divide into 6 servings, allowing the buns to cool before splitting.
