Let’s make it.

  1. Heat the oven to 325°F (165°C) and line a tray. Whisk the egg whites, sugar, vanilla and salt by hand until frothy; firm peaks are not needed.
  2. Stir in the desiccated coconut until every strand is moistened. Leave for 5 minutes so the coconut absorbs some liquid.
  3. Divide into 12 compact mounds, pressing each together with damp hands or two spoons. Set them on the tray with a little space between.
