STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C) and line a tray. Stir the peanut butter well before weighing so its oil is evenly mixed.
- Mix the peanut butter, egg, sugar and vanilla until smooth. Stir in the almond meal, baking powder and salt.
- Divide into 12 balls. Place on the tray and flatten with a fork in two directions, leaving room between the cookies.
- Bake for 12–16 minutes until the edges are set and the centers have lost their wet sheen. Avoid overbaking; they firm as they cool.
- Cool on the tray for 10 minutes, then move to a rack. Divide into 12 servings.
