STEP BY STEP
Let’s make it.
- Heat the oven to 340°F (170°C) and line two trays. Beat the butter and sugar until combined, then mix in the egg and vanilla.
- Stir in the almond meal, salt and half the sesame seeds. Chill for 10 minutes if the dough is too soft to handle.
- Divide into 12 balls. Press into the remaining sesame seeds, then flatten on the trays to rounds about 5 mm thick.
- Bake for 14–18 minutes until golden at the edges, rotating the trays halfway through. Watch closely near the end because sesame browns quickly.
- Cool on the trays for 5 minutes, then on a rack until crisp. Divide into 12 servings.
Kitchen notes
- A thin, even thickness gives the best crunch. The cookies contain measured sugar.
