STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Line a tray. If the ricotta has free liquid, drain it before weighing.
- Mix the almond meal, ground flaxseed, baking powder and salt. Whisk the ricotta, eggs and oil until combined.
- Stir the mixtures together and rest for 10 minutes. Divide into 6 mounds and shape with damp hands into low, rounded rolls.
- Bake for 23–28 minutes, until the rolls are golden underneath and the centers contain no wet dough.
- Cool on a rack for at least 10 minutes. Divide into 6 servings and split gently with a serrated knife.
Kitchen notes
- These rolls are soft and compact. Drain very wet ricotta well so the dough does not spread excessively.
