Let’s make it.

  1. Check that the tofu package permits eating it without cooking. Drain, pat dry and cut into bite-size cubes.
  2. Whisk the oil, lemon juice, oregano and pepper in a large bowl. Add the tofu and turn gently to coat while you prepare the vegetables.
  3. Dice the cucumber and tomato into pieces similar in size to the tofu. Drain any excess liquid from the olives.
  4. Fold the vegetables, olives, feta and parsley into the dressed tofu without breaking up the cubes.
  5. Divide into 4 servings, spooning the dressing from the bowl over each portion.
