STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C). Mix the almond meal, butter, 50 g beaten egg and one-third of the salt. Press into a lined 23 cm tart tin and prick the base.
- Bake the crust for 12 minutes until lightly colored. Meanwhile, whisk the ricotta with the remaining egg, lemon juice, parsley, pepper and remaining salt.
- Spread the raw diced salmon evenly in the crust. Pour the ricotta mixture around the pieces and gently level the surface.
- Bake for 30–38 minutes, until the center is set and reaches 165°F (74°C). Cover the pastry edges loosely if they color too quickly.
- Rest for 10 minutes, then cut into 6 servings and lift with a broad spatula.
Kitchen notes
- Use fresh or fully thawed salmon and remove any pin bones. The ricotta gives a soft set rather than a firm cheese topping.
