  1. Wash and thoroughly dry the lettuce leaves. Divide the leaves and diced cucumber among the serving plates.
  2. Whisk the peanut butter with the lemon juice, water and half the soy sauce until smooth. If the peanut butter is stiff, use warm water from the measured amount.
  3. Heat the oil in a skillet. Add the pork and cook for 8–10 minutes, breaking it apart, until browned and at least 160°F (71°C).
  4. Stir the ginger and garlic into the pork for 1 minute, then add the remaining soy sauce. Remove from the heat.
  5. Spoon the pork into the lettuce leaves. Share the cucumber, dressing and sesame seeds equally to make 4 servings.
