STEP BY STEP

Let’s make it.

  1. Heat a wide skillet over medium-high heat. Add the oil and pork, breaking it into small pieces. Cook for 7–9 minutes until browned and at least 160°F (71°C).
  2. Stir in the mushrooms and cook for 3–4 minutes until they release their liquid. Add the ginger and garlic and stir for 30 seconds.
  3. Add the cabbage, soy sauce, water and pepper. Cover for 3 minutes, then uncover and stir-fry for another 3–5 minutes until the cabbage is tender but still has some bite.
  4. Stir in the cider vinegar. Let excess liquid bubble away for 1–2 minutes; the vegetables should be glossy rather than swimming in liquid.
  5. Divide into 4 servings and scatter the measured sesame seeds over each bowl.
