STEP BY STEP
Let’s make it.
- Heat the oven to 350°F (175°C) and line a tray. Mix the almond meal, Parmesan, baking powder, pepper and salt.
- Stir in the eggs and butter, then fold in the chopped olives and parsley. Chill the dough for 10 minutes to make shaping easier.
- Divide into 10 pieces and shape into squat rounds about 5 cm wide. Arrange on the tray with space between them.
- Bake for 18–22 minutes until the edges are golden and the centers are set. Let them rest on the tray for 5 minutes.
- Move to a rack and cool before serving. Divide into 10 servings.
Kitchen notes
- Use a vegetarian-rennet hard cheese if needed. These savory biscuits are crumbly, with no unlisted sweetener.
