STEP BY STEP
Let’s make it.
- Heat the oven to 375°F (190°C). Cook the raspberries with half the sugar for 5–6 minutes, mashing, until reduced slightly. Stir in the chia and cool until thick.
- Melt the mozzarella and cream cheese together in a microwave-safe bowl in short bursts, stirring. Let cool until warm, then work in the almond meal, egg, remaining sugar, vanilla and salt. Chill for 10 minutes if sticky.
- Divide the dough into 8 portions. Roll each between sheets of baking paper to a circle about 12 cm wide. Share the cooled raspberry filling among the circles, keeping it on one half with a clear border.
- Use the paper to fold the dough over. Seal the edges firmly with a fork, transfer to a lined tray and cut a small steam slit in each pocket.
- Bake for 18–23 minutes until golden and the pastry is set. Cool for at least 10 minutes before dividing into 8 servings; the filling stays hot.
Kitchen notes
- The pastry is cheese-based and has a gentle savory note; it is not laminated puff pastry. Keep the fruit filling thick to reduce leaks.
