STEP BY STEP
Let’s make it.
- Heat the oven to 325°F (165°C). Beat the butter and sugar until creamy, then stir in the egg white and vanilla.
- Mix in the almond meal, cinnamon and salt. Chill the dough for 15 minutes, then roll between sheets of baking paper to about 4 mm thick.
- Remove the upper paper and cut into 12 pieces of similar size. Separate them slightly on lined trays, using a thin spatula if necessary.
- Bake for 13–18 minutes until the edges are golden. Remove thin edge pieces earlier if they brown before the others.
- Cool on the trays for 5 minutes, then transfer to a rack and cool completely. Divide into 12 servings.

- The dough is fragile when warm. Return it to the fridge briefly if it sticks while cutting.
