STEP BY STEP
Let’s make it.
- Season chicken with half the salt and pepper. Heat half the oil in a skillet and cook for about 6–8 minutes per side, until the thickest part reaches 165°F (74°C).
- Move chicken to a clean plate and rest for 5 minutes. Keep the juices for the salad.
- Stir yogurt, lemon juice, garlic, parsley, remaining oil and salt into a dressing.
- Arrange lettuce and cucumber in a bowl. Dice the avocado shortly before serving and fold it through gently.
- Slice the rested chicken. Divide chicken, vegetables, dressing and collected juices into 4 servings.
