Let’s make it.

  1. Mix the beef with onion, half the garlic, cumin, paprika, half the parsley, half the salt and the pepper. Shape into 8 flat oval patties.
  2. Mix the yogurt with half the cucumber, remaining garlic, half the lemon juice and a pinch of the remaining salt. Chill while cooking.
  3. Heat half the oil in a skillet over medium heat. Cook the patties in uncrowded batches for about 5–7 minutes per side, until their centers reach 160°F (71°C).
  4. Toss the remaining cucumber, tomato, parsley, lemon juice, oil and salt together. Include the vegetable juices in the dressing.
  5. Divide the patties, salad, sauce and collected pan juices into 4 servings. Serve two patties per person.
