STEP BY STEP
Let’s make it.
- Slice the mushrooms and dice the onion. Set the sour cream out while preparing the rest of the ingredients.
- Heat a wide, deep skillet over medium-high heat. Add the oil and mushrooms. Cook for 6–8 minutes, stirring occasionally, until their liquid has mostly evaporated and the edges are browned.
- Add the onion and cook for 3 minutes. Add the ground beef and break it into small pieces. Cook for 7–9 minutes until the beef reaches 160°F (71.1°C). Keep the cooking juices in the skillet.
- Stir in the garlic, paprika, salt and pepper for 30 seconds. Add the measured water and scrape up the browned bits. Simmer for 2 minutes.
- Add the spinach in batches and stir until wilted, about 2 minutes. Take the skillet off the heat, wait 1 minute, then stir in the sour cream. Warm gently if needed without boiling. Divide the entire skillet into 4 servings.

- Sour cream can split at a hard boil. Add it off the heat and warm the finished sauce gently.
