STEP BY STEP
Let’s make it.
- Heat half the oil in a wide skillet. Sauté the cauliflower with half the salt for 6–8 minutes, keeping a little bite; transfer to a warm bowl.
- Add the remaining oil and onion to the skillet. Cook for 3 minutes, then add the beef and break it into small pieces.
- Cook the beef for 8–10 minutes until it reaches 160°F (71°C). Stir in garlic, cumin, paprika, pepper and remaining salt for the final minute.
- Mix avocado and tomato with the lemon juice. Stir the sour cream until smooth.
- Divide cauliflower, beef with its juices, avocado mixture and sour cream into 4 servings. Keep the toppings separate until serving.
