STEP BY STEP
Let’s make it.
- Heat the oven to 325°F (165°C). Line a 20 cm square tin, leaving paper handles. Beat the butter and sugar until combined.
- Mix in the vanilla, almond meal and salt. Fold in three-quarters of the walnuts; the mixture will be crumbly but should hold when pressed.
- Press firmly and evenly into the tin. Scatter the remaining walnuts over the top and press them into the surface.
- Bake for 23–28 minutes until golden at the edges. While still warm, score lightly into 12 bars without lifting them out.
- Cool completely in the tin, lift out with the paper and cut along the marks. Divide into 12 servings.

- Pressing firmly and cooling fully are essential for this egg-free, crumbly shortbread.
- The total time includes approximately 45–55 minutes for cooling before slicing. A larger or deeper bake may need longer.
