STEP BY STEP
Let’s make it.
- Mix turkey, beaten egg, feta, onion, half the garlic, half the oregano, half the salt and the pepper. Shape into 16 meatballs.
- Heat oil in a deep skillet over medium heat. Brown meatballs gently in batches for about 6 minutes; transfer to a plate.
- Cook zucchini in the skillet for 4 minutes. Add remaining garlic, oregano, tomatoes and salt; bring to a simmer.
- Return the meatballs and their juices. Cover and simmer for 12–15 minutes, turning once, until the centers reach 165°F (74°C).
- Divide meatballs, zucchini and all sauce into 4 servings, four meatballs per person.
