STEP BY STEP
Let’s make it.
- Mix soy sauce, vinegar and measured water. Prepare all vegetables before heating the pan.
- Heat half the oil in a wok or deep skillet. Stir-fry chicken in uncrowded batches for 5–7 minutes to 165°F (74°C); transfer with its juices to a bowl.
- Add remaining oil, cabbage and pepper. Stir-fry for 4–5 minutes until slightly softened but still crisp.
- Add ginger and garlic for 30 seconds. Return the chicken and juices, pour in the sauce and toss over the heat for 2 minutes.
- Divide the stir-fry and sauce into 4 servings. Finish with sesame seeds.
Kitchen notes
- Use a wide pan and work in batches so the chicken browns instead of steaming.
