STEP BY STEP
Let’s make it.
- Heat the oven to 325°F (165°C). Mix the ground flax, sesame, chia, almond meal and salt, then stir in the water and oil.
- Rest for 10 minutes to form a gel-like dough. Spread between sheets of baking paper into a rectangle about 30 × 35 cm and 3 mm thick, then remove the upper sheet.
- Transfer to a tray and bake for 20 minutes. Remove briefly and score into 16 pieces with a knife or pizza wheel.
- Bake for another 20–30 minutes until dry and crisp. Remove browned edge pieces earlier if needed, leaving the center to dry fully.
- Cool completely before breaking along the score lines. Divide into 8 servings; the original serving is two pieces.
Kitchen notes
- Thickness determines crispness. If a cooled piece bends, return it to a low oven briefly to dry further.
