  1. Toast the almonds in a dry saucepan over medium heat for 3–4 minutes, stirring, then transfer to a bowl.
  2. Melt the butter in the saucepan. Soften the onion for 5 minutes, add the garlic and stir for 30 seconds.
  3. Add the cauliflower, water, salt and pepper. Cover and simmer for 15–18 minutes, until the cauliflower is very tender.
  4. Add the spinach and cook for 2 minutes. Blend carefully with an immersion blender, keeping its head submerged, then stir in the cream and lemon juice. Warm gently.
  5. Divide into 4 servings and scatter over the toasted almonds. Include an equal share of the almonds in each bowl.
