STEP BY STEP

Let’s make it.

  1. Heat two-thirds of the oil in a wide covered skillet. Add the eggplant and half the salt. Cook for 10 minutes, stirring; add a splash of the measured water if it sticks.
  2. Move the eggplant to a bowl. Add the remaining oil and onion to the skillet, then cook for 4 minutes.
  3. Add the beef and break it up. Cook for 8–10 minutes until its temperature reaches 160°F (71°C). Stir in the garlic, oregano and pepper.
  4. Return the eggplant and add the tomatoes, remaining water and salt. Cover and simmer for 12–15 minutes, until the eggplant is soft throughout; uncover briefly if watery.
  5. Crumble the feta over the skillet. Divide all the beef, vegetables, sauce and cheese into 4 servings.
