STEP BY STEP
Let’s make it.
- Heat the oven to 400°F (200°C), conventional heat. Halve and clean the peppers. Brush the halves with 5 g oil, place cut-side up in a large baking dish and roast for 15 minutes.
- Meanwhile, heat the remaining 10 g oil in a wide skillet. Add the onion and cook for 3 minutes. Add the beef and cook for 7–9 minutes, breaking it up, until it reaches 160°F (71.1°C).
- Stir in the garlic, paprika, oregano, salt and pepper. Add the chopped cauliflower and tomatoes with their juice. Cook uncovered for 8–10 minutes, stirring, until the cauliflower is just tender and the filling is thick.
- Divide all the filling between the 8 pepper halves. Scatter the cheddar evenly over the tops.
- Bake for a further 15–20 minutes, until the peppers are tender and the cheese is melted and lightly golden. Serve two filled halves per person.
Kitchen notes
- Choose peppers that sit steadily in the dish; lean them against one another if needed.
- Weigh the peppers after removing stems and seeds. Their size makes a noticeable difference to the carbohydrate estimate.
