Let’s make it.

  1. Mix turkey, onion, thyme, paprika, half the salt and the pepper. Shape into 8 small flat patties.
  2. Heat oil over medium heat and cook patties for 4–6 minutes per side, until the centers reach 165°F (74°C). Transfer with their juices to a warm plate.
  3. Melt butter in a clean nonstick skillet. Add spinach and stir until wilted.
