STEP BY STEP
Let’s make it.
- Heat the oven to 390°F (200°C). Put the broccoli and water in a covered saucepan and steam for 4–5 minutes, until just beginning to soften. Drain any remaining water.
- Spread the broccoli in a roughly 25 × 20 cm baking dish. Tuck the salmon pieces among the florets.
- Whisk the cream, lemon juice, mustard, garlic, salt and pepper. Pour evenly over the fish and broccoli, then sprinkle with Parmesan.
- Bake for 20–25 minutes, until lightly golden and the center of the casserole reaches 165°F (74°C). Check between the largest pieces of fish.
- Rest for 3 minutes, then divide into 4 servings, spooning the sauce over each portion.
Kitchen notes
- Pre-steaming the broccoli prevents crunchy stems when the fish is ready.
